Khajoor Pak: The Natural Protein Bar for Healthy Snacking

Protein bars are becoming a go-to snack for those seeking a quick, wholesome, and energy-boosting treat. But many store-bought dry fruit bars are packed with refined sugar and additives. One of the best traditional recipes is Khajoor Pak — a natural protein bar made with dates, dry fruits, and nuts. Dates provide natural sweetness, fiber, and quick energy, while dry fruits like almonds, cashews, and pistachios are loaded with antioxidants, protein, and healthy fats. Together, they make a balanced, nourishing snack.


Ingredients

  • 2 cups chopped seedless dates

  • ½ cup pistachios (pista)

  • ½ cup almonds (badam)

  • ½ cup cashew nuts (kaju)

  • 2-5 tablespoons A2 cow ghee

  • 1 teaspoon cardamom (elaichi) powder

Preparation

Step 1: Lightly roast pistachios, almonds, and cashews until aromatic.
Step 2: In a kadhai, heat the ghee and add chopped dates. Stir until soft and mashable.
Step 3: Mash the dates well, then add roasted nuts and mix thoroughly.
Step 4: Add cardamom powder, mix, and switch off the gas.
Step 5: Transfer the mixture into a mould or tray. Optionally, sprinkle chia seeds, pumpkin seeds, or sunflower seeds on top.
Step 6: Refrigerate for 30 minutes. Once set, cut into bars or roll into bite-sized balls.

Tips for Shaping

For Bars: Press the mixture into a lined dish and chill for 1–2 hours, then cut into bars.
For Bites: Roll the mixture into small balls — perfect for on-the-go snacking.
